In the Cuneo plain, a historic dairy has been producing cheeses for more than a century with milk coming from a sustainable supply chain in full respect of the surrounding nature.

The animals graze freely during the summer and are fed by selected hay in winter. In this blue cheese, raw goat's milk is used to maximize its characteristics,

to which penicillium roqueforti spores are added which will allow the selected molds to develop. The maturation lasts approximately 60 days.
